Gastronauts are going gaga for culinary wizard Olav Peterson’s artisanal New American cuisine bolstered by fresh herbs and produce from the chef’s on-site garden. To wit: Norwegian haddock bedded with fiddlehead ferns and English pea purée, and the sweetbread reuben with pickled tomatoes. $$$ (07/2011)
